Gazpacho with a tropical twist


I am honored that Lazaro has asked me to be the guest blogger for Lazaro Cooks! today. Since Lazaro and Nancy share the hosting, I thought it might be fun to make a soup that would suit both of their tastes. I chose gazpacho, but decided to garnished it with a tropical twist – mango. After all, Lazaro does live in south Florida.

Sam...I want that gorgeous glass bowl;o) Very nice way to present such a flavourful soup.

I am so looking forward to making gazpacho this summer, and you've really peaked my interest with this beautiful photo and recipe, Sam. The ingredient that really jumps out for me is the dill. I can't wait to give it a try.

This gazpacho recipe is being shared just in time, it's hot outside and this looks like a refreshing blend. I've made gazpacho previously and have not found a recipe I like, perhaps this will be the one.

Downright scrumptious, Sam. Adding the mango is genius. My mother used to make the most delicious aspic using almost the same ingredients. What a wonderful summer recipe.
