I'm much more of an eye-baller and always use up what I have on hand and make it up as I go along.<br /><br />I love squid. <br />Sam, I just wanted to share the fact that the cooking of the squid can be tender in two ways. One of which you've mentioned...to cook it quickly...or to really overcook it back to it's tender point.
