Boiled potatoes tossed with parsley and butter is my DH's favorite way to have them. When we were in Ireland, many years ago, EVERY SINGLE MEAL came with a side of potatoes! LOL Once he ordered cream of potato soup for lunch & we thought it was so funny that they brought him a side of potatoes, too. No wonder my people starved when the potato famine hit.
